This hearty, flavorful chili is perfect for a winter meal. It’s also vegan, so everyone can enjoy it. The best part is that you can throw all the ingredients into a slow cooker and let that do the rest of the work.
This chili is made with four different kinds of beans, which gives it a great flavor and vegan ground beef which adds perfect texture. The beans are simmered in with plenty of spices that you can adjust to your liking. Serve this chili with some vegan sour cream, shredded cheese, and chopped green onions.
To start off, open all the cans of beans and tomato sauce and add them to the slow cooker. Next, dice the chilies, onions and garlic. Add those as well as the salt, pepper, and chili powder. Let all of that cook on low.
In a large skillet, add a small amount of oil and start to sizzle the vegan ground beef until cooked properly. As that to the slow cooker and stir everything.
After everything is added, let it sit for 6-8 hours. You can keep adding salt, pepper, or chili powder if needed through the process.
