1. One thing I love to do is roll out the cookie dough into balls and ad chocolate to the center to let them melt into thumbprint cookies.
2. Add some spices like saffron or lavender to create a unique favor and look to your cookies. They will definitely impress all your friends if you bring these beautiful cookies to a party or holiday event.
3. Want to add a simple jelly/fruit jam filling to your cookie and have a beautiful result? First, cut the shape that you want. Next, cut that same shape again, this time cutting a circle out of the center. When you have both shapes, place the cookie with the circle cut out on top of the other one. You will now have a perfect center that can be fillet with jam, fruit, or what ever else you can think to add to our delicious vegan shortbread cookie.

Pre-heat your oven on to 300. Sift the flour into a large bowl for mixing. Then, add the sugar and salt. Stir until all the dry ingredients are thoroughly mixed.
Add the butter and vanilla extract to your bowl. fold all the ingredients together until everything is mixed. It should be pretty crumbly at first so keep folding until it becomes a dough ball.
Flour your working space to roll out your dough. You should roll it out to be about 1/2 inch for your shapes.
Put your shapes into the oven and bake for 25-30 minutes.
